Ingredients:
2 cups pumpkin puree (canned or fresh)
4 cups vegetable broth
1 onion, chopped
2 cloves garlic, minced
2 cups fresh spinach, chopped
1 teaspoon ground ginger
1 teaspoon cinnamon
Salt and pepper to taste
1 tablespoon olive oil
Instructions:
In a large pot, heat olive oil over medium heat. Add the chopped onion and garlic, and sauté until the onion becomes translucent.
Stir in the pumpkin puree, vegetable broth, ginger, and cinnamon. Bring to a simmer, cooking for about 10 minutes.
Add the spinach and cook for another 3-5 minutes until the spinach wilts.
Use an immersion blender to puree the soup until smooth, or blend in batches in a regular blender. Season with salt and pepper to taste.
